HCG Spicy Gingered-Peach Shrimp with cabbage salad

HCG Spicy Gingered-Peach Shrimp

7 oz raw shrimp (tails on)
1 grated peach
1 cup fat free chicken stock
2 tsp ginger
3 tsp onion powder
1 tsp salt
1 tsp basil
1 tsp crushed red pepper
8-9 drops of sweet leaf brand Stevia extract

Simmer all ingredients in saucepan then add shrimp. Cook 3 minutes or until shrimp is white through out. Turn down on low to simmer till time to serve. Makes 2 servings.

Cabbage Salad:

1/2 c chopped cabbage
1/2 c lettuce
1/4 stalk of celery
a few slivers of purple onion
1/2 tomato
1/4 cucumber

Dressing:
1/4 cup apple cider vinegar
8-10 drops stevia extract
1/2 tsp salt
1/2 tsp pepper

Mix salad ingredients and dressing and refrigerate overnight.

Serve with 1 melba toast. Savor!
